Arkhi: (Mongolia) Made from Milk

Arkhi is a Mongolian distilled Alcohol beverage that is especially popular among men because of its strong taste and velocity. It is made from the distillation of milk, which is very unique to the productions of all the other alcohols made across the world. It usually has an Alcohol content of approximate 10% to 12% by volume. It is a clear and colorless liquid that is most often served cold and drunk all at once rather than sipping over time.

Arkhi is produced specifically using fermented yogurt of the milk from cattle and yaks, called Kefir. It can also be made using Isgelen Tarag or Airag, which is the milk of a mare. The drink is produced across the country in a very specific way that has lasted several centuries with little variations or changes.

Arkhi is made first by placing a Kefir inside the wok on a stove and then placing a vat on top. A bowl in the center is then connected to a channel made of wood, and another second wok is placed on top of the first vat. The second vat is used as a lid and is filled with cold water.

Once the wok heats up, the kefir will vaporize and its steam condenses as it touches the cold lid. The shape of the lid is convex and it enables the vaporization to fall exactly into the collector in the center. The arkhi is then collected by the wooden channel in a jar. During the process of production, the cold water should be replaced at least twice, creating three rounds of production. The highest quality of liquor is made during this first round of cold water. The lowest quality will come from the third round.

Arkhi is typically made in rural areas of Mongolia but it is enjoyed all across the country today.
