Alcohol beverages are almost always made from fermented grains or fruits, with the notable exception of rum, which is made from fermented sugar cane. Some of the grains most commonly used to make Alcohol beverages are barley, rye, corn, rice, and wheat.

Barley is used mainly in beer, which is the oldest and most common Alcohol beverage in the world and is produced in over 180 different styles by more than 20,000 different breweries. Barleywine, a stronger type of beer, is also made from barley and is being produced by some craft breweries. Barley is an ingredient in Scotch and Irish whiskeys and in shochu, a distilled beverage indigenous to Japan.

Rye is also used in beer brewing, notably in the Bavarian roggenbier. Rye beers are also being produced in American craft breweries, and are characterized by a sour and slightly spicy taste. Rye is used in the production of vodka, especially in the Polish varieties, and also in making rye whiskey. Rye whiskey was practically phased out after Prohibition, but is making a comeback in the U.S. market with products like Templeton Rye and Wild Turkey Rye.

The most common Alcohol beverage made from corn is bourbon whiskey, which is typically made from mash containing about 70% corn and that must contain 51% corn to be classified as bourbon whiskey. Corn is also occasionally used to make vodka, although wheat and rye vodkas are considered higher-quality than vodkas made with corn.

Wheat is used in the production of most of the better varieties of Russian vodkas, including Stolichnaya. The Dutch vodka Ketel One and the Swedish vodka Absolut are also made from wheat. Wheat is also used to make certain types of beer, most notably witbier, the Dutch style commonly flavored with orange peel and coriander, and weissbeir, the German style of wheat beers to which the popular hefewiezen belongs.

Rice is the primary grain used in making sake, the Japanese wine, and the grain traditionally used to make soju, a distilled beverage from Korea. Rice is also used in brewing beer; in fact, Budweiser is made using a mash containing about 30% rice. The Japanese beers Kirin and Sapporo, which are growing in popularity in the U.S. are also rice beers.
