Beer grilling Sauces
Spread this sauce over a steak or use it to grill up some burgers. It is a tangy alternative to traditional grilling sauces.

Ingredients

  • 12 oz BBQ sauce (any flavor)
  • 2 tbsp white horseradish
  • 1 small onion, peeled and minced
  • 1 green pepper, seeded and minced
  • 2 garlic cloves, peeled and minced
  • 2 tbsp apple juice concentrate (undiluted)
  • 3 tbsp Tabasco sauce
  • 1 tsp fresh ground pepper
  • 12 oz beer of any type.

Directions:

  1. In a medium saucepan, cook the onion, pepper and garlic in 3 tablespoons of the beer.
  2. Add the barbeque sauce, horseradish, apple juice concentrate, Tabasco sauce, pepper and the remaining beer.
  3. Bring to a simmer and cook until vegetables are tender.
  4. Remove from heat and cool for an hour.
  5. Puree in a blender until smooth.

Use as a sauce to brush on chops or ribs during the last 15-20 minutes of cooking. You should have enough left over to keep on the table during the meal.

Grilled Corn on the Cob Recipe
Grilled corn is a standard favorite. While the recipe below is fairly simple, you can make it more complex by grilling corn with your favorite mix of spices. For example, try a Cajun or curry mix to some extra spice!

Ingredients

  • 12 ears of corn
  • 12 sheets of aluminum foil
  • 12 tbsp of margarine.

Directions:

  1. Take several sheets of foil and add a tablespoon of butter where the corn will be touching the foil.
  2. Peel the corn, removing the husk and silk. Add any spices you desire at this point. Roll it into the foil, pinching the ends closed.
  3. After you have heat up grill, use medium flame to cook the wrapped corn, turning after five minutes to each side.
  4. Be certain to listen for crackling, for it might be a sign that the corn is burning.

Baby Back Ribs Recipes
Without a doubt, baby back ribs are one of the most popular food items to grill. As with the corn recipe, this recipe is simple and straightforward. You can jazz it up by choosing a unique marinade or using a homemade barbeque sauce.

Ingredients

  • 4 lb pork baby back ribs
  • aluminum foil
  • 2, 18 oz bottles barbecue sauce.

Directions:

  1. Spray the pieces of foil with vegetable cooking spray.
  2. Using a pastry brush, coat the ribs liberally with barbeque sauce and place each portion in its own piece of foil.
  3. Wrap the foil tightly around each rib portion and refrigerate for at least 8 hours, or overnight.
  4. Grill ribs for about 5-10 minutes, or until they are cooked through. Of, bake them in the foil at 300°F for two and a half hours.
  5. Remove from foil and add more sauce to taste.

Barbecue Chicken
When barbequing chicken, make a little extra so that you have leftovers to make chicken salad, delicious chicken sandwiches or barbeque chicken pizzas.

Ingredients

  • 4, 4 lb chickens – quartered
  • 1/4 c cooking oil
  • 4 tsp thyme
  • 2 tsp garlic salt
  • 2 tsp crushed red pepper
  • barbecue sauce to taste
  • salt and freshly ground black pepper to taste.

Directions:

  1. Rub the chicken with the oil. Season with the thyme, garlic salt, red pepper, salt and black pepper.
  2. When the fire on the grill is medium hot, arrange the chicken, skin side down, on the grill.
  3. Cover and cook, rotating from time to time for about ten minutes.
  4. Turn the chicken, then cover and continue cooking until almost cooked through (about fifteen minutes longer).
  5. Uncover and generously spoon the barbecue sauce on the skin.
  6. Turn the chicken skin side down and grill, basting and turning so it doesn't burn, until the pieces are nicely glazed and slightly charred, about 10 minutes.
  7. Serve hot off the grill.

Barbeque Pork Chops
Include pork chops in your next barbeque party as a nice alternative to the traditional burger.

Ingredients

  • 4 pork chops, 1 inch thick
  • 3/4 tbsp cumin
  • 1/4 tbsp garlic salt
  • 2 tablespoon butter, softened
  • juice of 1 lemon
  • salt and pepper.

Directions:

  1. Mix the butter, garlic salt, regular salt, pepper and cumin. Rub into both sides of the meat.
  2. Place the pork chops on a hot grill, for fifteen minutes, turning once.
  3. Turn grill down to medium, then grill another ten minutes, turning the meat.
  4. Serve hot off the grill.
