Low Carb Baking Recipes

Among the popular fad diets of today, the Atkins diet has indeed taken the dieting public by storm. As a result, people are trying to find ways to prepare meals to fit this diet. Eliminating carbs and sugar has become the trend. If you are among those trying to find ways to make Atkins friendly meals, read on to learn some baking recipes that are low in carbs.

Sour Cream Chicken
Ingredients

  • 12 boneless, skinless chicken breasts 
  • 24 strips of bacon 
  • 4 c sour cream 
  • 1/2 c heavy cream 
  • 8 tbsp soy sauce 
  • 1/2 tsp ground ginger 
  • 1/2 tsp garlic 
  • 6 tbsp margarine 
  • salt and pepper to taste.

Directions:

  1. Lightly fry bacon until partially done so that it is well cooked but not crisp. 
  2. Wrap two pieces of pliable bacon around each chicken breast. 
  3. Arrange the breasts in a Corning or Pyrex casserole dishes (or dishes) coated with the melted margarine on the bottom and sides. 
  4. Mix sour cream, cream, soy sauce, garlic, and ginger in a small bowl. 
  5. Pour the mixture over chicken. Top with salt and pepper to taste.  
  6. Bake covered at 325°F for one hour. Uncover and continue baking until the chicken is cooked through.

This recipe serves six people, with four net grams of carbohydrates per serving.

This recipe can be "lightened up" by using fat free half & half instead of heavy cream, light sour cream, light margarine and turkey bacon instead of regular bacon.

Low Carb Sugar & Chocolate Cookies
When making the dry mix for low carb cookies, you may want to make a lot of it, as dry mixes won't go bad.

Ingredients for dry mix

  • 2 c soy flour 
  • 4 c soy protein isolate 
  • 4 tbsp baking soda 
  • 2 tsp salt 
  • 4 tbsp Splenda.

You can also substitute soya powder for the soy flour if you prefer a more mild taste. Egg protein can be substituted for soy protein, as well.

Ingredients for cookies

  • 1 c of bake mix (see above recipe)
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/4 c artificial sweetener, 10-12 packets
  • 1 c butter
  • 2/3 c brown sugar twin
  • 1 tsp vanilla extract
  • 2 eggs.

You can add 2 teaspoons of unsweetened cocoa if you want to make chocolate cookies using this basic sugar cookie recipe.

Directions:

  1. Mix flour, salt, and baking soda in one bowl, and the butter, sugars and extract in another. 
  2. When the butter mixture has become creamy, add the eggs. 
  3. Gradually add the contents of the flour mix to the butter mix. Beat a good dough forms. Add the cocoa to make chocolate cookies. 
  4. Place onto a cookie sheet greased with cooking oil.  Flatten cookies and bake at 375°F for fifteen to twenty minutes. 
  5. Let them cool for at least five minutes before serving.

This recipe makes about 24 2x2 inch cookies. Each cookie contains 74 calories, 8 grams Total Fat, 0.5 grams protein, 0.9 grams carbohydrate and 36.25 milligrams cholesterol.

Basic Vegetable Cream Soup
This Atkins friendly soup is perfect for a cold winter night.

Ingredients

  • 1 lb cauliflower, chopped 
  • 1.5 lb chopped broccoli
  • 1 tbsp extra-virgin olive oil 
  • 2 cloves garlic, minced 
  • 10 c of chicken stock 
  • 1 tsp salt 
  • 1.5 tbsp Dijon mustard 
  • 1 tsp dried tarragon leaves
  • sea salt and freshly ground black pepper to taste
  • heavy cream, optional.

Directions:

  1. Heat the oil over medium heat in a large pot, then add the garlic. 
  2. Add the broccoli, cauliflower, chicken stock and salt and bring to a boil.  
  3. Turn down and cook until the vegetables are tender (about 20 minutes). 
  4. Using a food processor or blender, puree the mixture. 
  5. Add the mustard and tarragon, and thin with the chicken stock or water if the soup is too thick. Add the cream at this point if you wish.

This recipe makes about 12 cups. Per cup, the nutritional information, excluding the cream, is as follows: 47 total calories, 3 grams fat, 2.6 grams of carbohydrates, 1.4 grams of fiber and 1.3 grams of protein.

Feta and Olive Meatballs
While you can't eat pasta on the Atkin's diet, you can still enjoy Italian food. Make these meatballs and serve them topped with your favorite cheese.

Ingredients

  • 1 c chopped parsley 
  • 4 tbsp finely chopped onion 
  • 2 pounds ground lamb or beef 
  • 1 c crumbled feta cheese 
  • 1 c pitted green olives, coarsely chopped 
  • 4 eggs
  • 2 tsp dried oregano.

Directions:

  1. Combine all the ingredients and mold into 16 meatballs. 
  2. Put the meatballs about two inches apart on a baking sheet and broil, about three inches away from the heat until browned on top. Turn over and broil on the other side.

You won’t really need any salt in this recipe as the feta and olives provide enough. You can also fry the meatballs in olive oil.

This recipe will make about 32 meatballs that each contain 101 total calories, 8 grams of fat, 1.4 grams of carbs, 0.5 grams of fiber, and 5.9 grams protein.
